ABOUT THE VINEYARDS

  • Grapes: Primitivo 50% - Negroamaro 50%.

  • Type: red wine.

  • Appellation: Salento I.g.t.

  • Vineyard location: Cellino San Marco.

  • Vineyard altitude and orientation: 70 mt. a.s.l.
    W, SW.

  • Soil: clay with limestone rock.

  • Vineyards age: 10 years old.

  • Vine training system: bush vines with settonce system.

  • Plant density: 5.100 vines/ha.

WINEMAKING

  • Harvest time: last week of August and first week of September (Primitivo), last two weeks of September (Negroamaro).

  • Harvest method: grapes are hand-picked and collected in small cases.

  • Vinification: once in the cellar, grapes are manually selected in the rolling tape before de-stemming and pressage. Fermentation takes place under the highest control, in order to obtain the maximum result from the extracting phase, with délestages and circulation pumping from the bottom to the top and viceversa, to extract color and fruitiness from the skins. Fermentation is done under controlled temperature between 27° and 31° C, to preserve as much as possible the original aromatic qualities of the fruit. After the alcoholic fermentation is finished, the wine is transferred into French oak barriques, where the malolactic fermentation takes place. At the end of the ageing in barrique, the wine is bottled after a careful tasting.

  • Barrel ageing: 4 months in 225 L barriques.

  • Bottle ageing: 3 months.

TASTING NOTES

Deep ruby red with purple nuances. Fine and intense fresh fruit aromas and flowery bouquet. Well balanced sweetness and acidity, soft and rich, the lingering finish is characterized by sweet tannins and fruit.

Alcohol: 13% Vol.

Serving temperature: 16-18° C.
