THE MASSERIA

Masseria Li Veli is located along the road that links Cellino San Marco to Campi Salentina, in an ancient Messapic site dominating the Salento planes. It covers an area of 33.000sqm 3740 of which are occupied by offices, guesthouse, vinification and storage rooms for raw materials and bottled wines.

The fermentation cellar has maintained its original function. Today it is a modern vinification cellar with horizontal fermentation tanks containing 125 hectolitres and 10 vertical tanks containing 130 hectolitres, for a total of 2500 hectolitres.

These tanks are also used for automatic pumping over, programmable délestage, must aeration, total programme managing and traceability of the vinification.

All systems are highly innovative and equipped with thermal control, systems of micro and macro aeration and computerized management and control of all the phases.

The high flexibility of these machines offers the possibility to programme and adapt the processing cycle according to the specific needs of each grape variety.

The storage and bottling area is equipped with modern thermo-controlled steel vats for a total volume of 2700 hectolitres.

The ageing cellar is a stunning stone structure restored at the beginning of the 20th century. The thick walls and the vaults create a perfect insulation. Moreover a modern air conditioning system has been installed which keeps the temperature at 16°C. Presently it contains 364 barriques and 77 tonneaux for a total of 1204 hectolitres of wine.

In the same building, although separated, are the wine bottling and ageing rooms.

Masseria Li Veli comprises 66.31.20 hectares, partly owned and partly leased, cultivated with Primitivo, Negramaro Susumaniello, Aleatico and Cabernet Sauvignon.
